I have to admit, my experience with Trentodoc sparkling wines has been fairly limited. My first time I think I ever had one was on my WSET Diploma D4 exam, and since then, well, that was it. Truly, it was a region of sparkling wines that I knew very little about!

So when I had the opportunity to try some sample bottles provided courtesy of Trentodoc, I was quite excited to learn more about their traditional method wines from the region.

Up first? Monfort's Le General Dallemagne Extra Brut from 2015. With 60 months of lees and a few more years of time in bottle on top, this was one stellar bottle!

This Trentodoc sparkling wine was pale gold in color with medium(+) aromas of lemon, lime, yellow apple, cream, bread dough, toast, yogurt, almond, wet stone, and bruised apple skin.

On the palate, it was dry with medium(+) acidity, body, and flavor intensity, a creamy mousse, medium alcohol, and a long finish. We had flavor notes of lemon, lime, pear, yellow apple, nectarine, wet stone, saline, almond, honey, cream, toast, ginger, and pineapple.

This was one lovely bottle of sparkling Italian wine all around. While the lees notes were perhaps a bit less prominent on the palate than the aroma, we really loved the balance of flavors in this one for a wonderfully complex bottle of sparkling!

We went for a full Italian dinner with this wine and paired it with homemade Balanzoni pasta stuffed with prosciutto and cheese. We thought the rich prosciutto and creamy cheese would balance the lees in the wine nicely, and that is exactly what happened- we had flavor pops of pear, cream, toast, and almond all around.

Our side, a spicy squash dish, also highlighted more tropical notes like pineapple and grapefruit while masking the lees- giving the wine more depth in fruit beyond our initial tasting. A great pairing all around!

Overall, Monfort Le General Extra Brut 2015 was the kind of sparkling wine bottle we love. Complex flavors, prominent lees notes, and a bit of age make for a great bottle paired beautifully with our Italian pasta dinner. We'd love to have more of this in our cellar!
