Tresor Des Sables Tavel 2023 Review – Intense Rose

When it comes to interesting and, dare we say, somewhat robust rose wines, we almost always look towards Tavel in France to enjoy bottles made with the Rosé de Saignée method.

This method effectively is bleeding off juice that is macerating on the grape skins as pigmentation is building. So rather than, say, a soft direct press or blending, this one produces wines that are similar to their red counterparts, but just a bit lighter overall.

Tresor des Sables from Les Vignerons de Tavel was one such bottle, which incorporates a bit of pressing into the mix as well, and is a beautiful rose, or, dare we say, just a really, really light red.

Tresor des Sables is a Lovely Rose from Tavel

This rose from Tavel was pale ruby in color with medium aromas of red cherry, watermelon, watermelon rind, raspberry, orange marmalade, wet stone, cranberry, and peach skin.

On the palate, it was dry with medium(+) acidity, body, and flavor intensity, high alcohol, light tannin, and a long finish. We had notes of strawberry, raspberry, watermelon, wet stone, white blossom, and beeswax.

This one sure had a lot going on, and throw on higher alcohol and body and this one really held up nicely for a lovely rose (or, well, light red depending on how you want to look at it).

Tavel Food Pairing – Scallion Pancakes With Beets

We paired this Tavel rose with scallion pancakes and beets as we thought the lighter nature of the wine with some prominent rose flavors would hold up with the vegetable-forward meal.

The scallion pancakes brought out more citrus flavors in the wine while the minerality held, and the beets made things a bit more astringent with more prominent lemon notes.

Although this pairing wasn't the best, we did enjoy how it held up to the scallion pancakes overall, but in the future we'd probably pair this with something less herbaceous and vegetable forward to see what would happen- perhaps a spicy Asian dish or duck as is recommended by the winery.

We'd buy a glass of this one and a bottle in the right circumstance.

Overall, we always love a good Tavel rose and this one was no different. For a fresh, summer wine that has intensity to match, its hard to overlook this one, and we'd always be down for a glass or a bottle with a good food pairing.
