We always love trying a classic grape from a wine region we aren't as familiar with, and the wineries in Slovenia are one such spot we don't see all too often.
Domaine Ciringa's Fosilni Breg Sauvignon Blanc was one such bottle, and while this one had an acid hit we weren't quite fond of, it had a nice concentration of flavor all the same.
Solvenian Sauvignon Blanc
This Sauvignon Blanc was pale lemon in color with a light effervescence. It had medium aromas of yellow apple, pear, elderflower, grass, peach skin, wet stone, beeswax, white blossom, lemon, lime, and saline.
On the palate, it was dry with high acidity, medium alcohol, and medium(+) body, flavor intensity, and finish. We had flavors of lemon, lime, wet stone, grapefruit, pineapple, peach, nectarine, saline, and beeswax.
The acidity on this one was, admittedly, fairly jarring and was almost a bit out of balance for our liking. Still, a slight phenolic texture helped round this one out.
Sauvignon Blanc Food Pairing – Yakisoba and Broccoli
We paired this Sauvignon Blanc with a Japanese yakisoba and a side of broccoli. The fried noodles helped more riper pineapple and grapefruit notes spike alongside more lemon, and the broccoli helped accentuate more floral notes that were a bit more muted with the wine on its own.
As such, we really enjoyed the pairing here for the different expressions that came out with the food!

We'd buy a glass of this one with the right pairing.
Overall, this Sauvignon Blanc had a really nice expression of flavors; however, we couldn't quite get over the high acidity as it felt out of balance for our liking. As such, we're okay on this one but could consider a glass with the right food pairing.
