When we normally think about rose wine, we often think of young, fresh bottles meant to be enjoyed shortly after bottling.

But Cavaliere Nero Rose Reserva is not your typical rose, and this sparkling bottle from Trentodoc is meant to have a bit of age. We were fortunate enough to try a sample bottle of the 2015 for this review, and at nine years old this rose still has a lot of life left in it!

Revi Cavaliere Nero Rose

This sparkling rose from Trentodoc was pale orange in color with medium aromas of peach, nectarine, cream, almond, watermelon rind, white blossom, rose, saline, raspberry, strawberry, and toast.

On the palate it was dry with medium(+) acidity, medium acidity, body, and flavor intensity, a zesty mousse, and a long finish. We had notes of strawberry, raspberry, cherry, peach, watermelon rind, wet stone, orange rind, almond, toast, cream, and bread dough.

We paired this rose with classic fish tacos with homemade tortillas. The light fish and acidic toppings helped more strawberry and cream notes come out in the wine, and we also noticed the effervescence a bit more with a pop in the bubbles along with perhaps a rind note as well.

The argument that rose goes with everything, and bubbles go with everything, rings true with this pairing- it is hard to pick a bad pairing for a sparkling rose, and one as delicious of this will go with many dishes- fish tacos included.

Overall, this is an incredible sparkling rose, one that is still refreshing despite being nearly nine years old. We think this one could even age a bit further; however, we'd also be more than willing to pop open another bottle now without hesitation- it is that good.
